So far I've beaten the 2 games with a pure dex build (thrust weapon and bow without shield) and currently doing it on DS3.Using the poison mist spell is effective as the arena is large and you get spacing to dwindle down his health. Dark spells are good but regular pyromancies are not effective at all, I wouldn't even recommend brining any. Just bring like poison mist, flash sweat and maybe like boulder spit but that spell kinda sucks. 1.40/40 or 60/60 Int/Faith is great, then if you run enough stats to use the Lothric SS with Dark Infusion or the Demon Scar you'll be set. You also have to make sure you have enough Attunement to use what you want. Vig I find 30-40 is usually fine and End 30 is usually comfortable. My build was SL130.
